Exciting and innovative new cocktails

Visit the Shanghai Bar and you will find a new cocktail list has been introduced, featuring unique drinks specially created by our bar team the likes of which you will not find anywhere else! To complement chef Bing’s highly-skilled layering of flavours and use of authentic spicing and seasoning in our food, the cocktails are similarly complex and intriguing.

Bright & Stormy is a long, cooling take on the classic Dark & Stormy, which in addition to the original’s rum, lime and ginger beer includes Maraschino, passion fruit syrup and grenadine. Jasmine & mint perfume adds an exotic extra edge, and the drink’s sunset-style appearance makes it the perfect punch to enjoy at sundown – or any time!

Sure to become a talking point for both its taste and spectacular appearance is Hutong’s Penicillin, the name a playful reference to its use of Laphroaig whisky, honey and ginger which many believe can cure all ills! Hennessy cognac infused in-house with goji berries and muddled galangal and physalis add herbal and citrus flavours, and the intriguing finished product is presented in a tiered, smoking ‘volcano’ glass. A generous serve, in two glasses, Hutong’s Penicillin is perfect for sharing.

For something really unusual, Shiitake & Cranberry combines Hendrick’s gin with a home-made cranberry and Merlot syrup, lemon juice, muddled shiitake mushrooms and a spritz of shiitake mushroom perfume – also made in-house by the bar team – to create a cocktail which perfectly balances sweet, sharp and savoury, the mushrooms giving an unexpected depth of flavour on the palate.

The Shanghai Bar is open to diners and non-diners from 12 noon daily. No reservations are taken, the bar operates on a walk-in basis, subject to capacity.
